Which files should I backup before installing Tiger?

You should backup your mail client's preferences and mail messages. Tiger makes a backup of your preferences before it makes any changes, but it's always best to also have an up-to-date backup.

If you use gpg and/or pgp, then you should also backup the data folders for these programs as well.

Of course, you should keep current backups of these folders and files routinely, too.
